Thanks, I found that out on my first smoke. I used 4 oz. for 1 slab of ribs and it was too much smoke for my taste, next time I will try 2 oz..
I guess that is part of the fun, experimenting.
I did my first smoke this afternoon, one rack of ribs and 4 oz. of hickory wood which apparently is too much wood for one rack of ribs.
The ribs were moist and flavorful but to smokey for my taste, I guess it is a learning curve and I am at the bottom.
Anyway I set the smoker at 225 and smoked...

What is the secret to getting a good bark on brisket, mine turns out very tasty but no, or very little bark. I am currently using a Traeger Lil Texan but I have a Smokin-it #3 on the way.

Just ordered a new Smokin It 3, I am replacing a Traeger Lil Texan, too many controller issues. Looking forward to new adventures and challenges of learning the ins and outs of a new smoker.
