    Try using wood with little or no bark at all and keep your exhaust wide open.You might want to try a smaller hotter fire(if that makes since)

    Help with Cleaning out a Rusty Offset Smoker

    I usually just put a heavy coat of pam or any other non-stick spray and turn the heat up to 500 for about an hour or so.

    I built the smoker and the trailer myself ,It's been a 5 month project so far.I did'nt think it would take this long but thats the way it goes I guess.

    I wish I had more room around the sides also,but to pull it down the road It's wide as I can go legally.I just noticed it, if you look to the left of the first pic you can just see two of my hidden treasures.

    I finally got it installed today,it went easier than I thought it would. I also included some pics of the inside of the smokehouse,it's still a work in progress.

    First cook on new build!

    Thanks for all the compliments,the chicken turn out great.I did the build myself out of an old propane tank.The one end had to be cut off to fit in the trailer, it was to wide by about 6". Using the propane with the wood I can get the right amount smoke for the job with about 4 sticks of wood...
