Well, now I just put in an hour and a half watching videos on how to make a DIY refrigerator. I really have no choice but to gut my MES and turn it into a curing chamber. Wifey is gonna love this one!!!
I threw a marinated skirt steak on the Kamado Joe and got it up to medium. I then did some peppers and onions in a CI on the KJ. Put the skirt steak in with it to heat it back up.
Curious if you could turn a master built smoker into a curing chamber. How hard would it be to change it from a heating device to a cooling device?

Put a 3 1/2 inch thick prime Rib on the KJ at 300 for a little over an hour. Then moved it over to a CI skillet on my gasser to sear. Turned out awesome!!!
Mind me asking what temp you smoked them at? Also, about how long did it take? I have a salmon filet to do after work tomorrow, but don't want to be up all night.
