    Military Smokers?

I retired from the Air Force after 22 years. 462x0 or 2W1x0 depending on how old you are. Now I'm in culinary school with plans to open up my own BBQ concession trailer. I've also tried a couple sanctioned BBQ competitions. Placed 4th in brisket both times and one of those cookoffs had 120...

    San Antonio BBQ team

I am looking to create a BBQ team in San Antonio. I've completed in two sanctioned events recently. The first one I placed 4th in brisket out of 120 teams. The second one I placed 8th in chicken, 5th in ribs and 4th in brisket. I also pulled down 2nd in beans. I am basically looking for...

    My new-to-me smoker.

I made a few cosmetic changes. I added a banner for when I go to competitions and I added a large bell (just because its cool). I ring the bell when its time to eat or when I am tasting my turn ins and they make me happy.

    My new-to-me smoker.

Contest was rescheduled and smoker worked like a champ. Tied for third. I was very happy with my turn in. Flavor, tenderness, brisket tug were all perfect. I had five packer briskets and eight pork butts going and only needed half of the smoker.

How to smoke briskets in La Caja China

Figured I would add an update. I've used the LA Caja and A Mazin smoker on a few local BBQ competitions and I won two of them and came in 3rd on another. Purists will scoff but in the right hands this is an awesome combination.

Looking to join a Competition cooking team in the Houston area

I too have competed in a few small competitions by myself. Won two and came in 2nd on a third. I'm retiring from the Air Force and moving to San Antonio in July. If that's close to you I might be interested in partnering up. I am so worn out after cooking all night. Wouldbe nice to share...

    Catering in St. Louis, MO

What are the dates? How many are in the reception? I have a smoker that could handle a pretty big crowd. I'm planning on starting a food truck or restaurant in Texas (so I'm not completely crazy for tossing my hat in the ring) but currently live near Kansas City. I grew up in St. Louis so it...
