Thank you, Gwanger. They are my favorite over baby backs/pork. I pulled them at 198 and put them on a hot grill for about 15-20 minutes in an attempt to get some more crispiness on the bark. I hadn't done it before so I figured I'd give a try. Seemed to work.
Thanks Markh024. The maple honey rub is something I bought in a small mom & pops supermarket near me. They have it private labeled by a place in SC I think.
Thanks, Challenger. I ask for them straight from the case before they cut them or package them. Typically the stores near me cut them in half lengthwise and sell them as half racks. I like them whole.
