Just bought a Masterbuilt XL propane smoker recently. Never had a smoker before. Smoked a boston butt first and it was not a good results. Found out the thermometer was off about 25 degrees which makes a BIG difference when you cook low and slow. Tried a small brisket next and compensated for the bad thermometer reading by increasing the indicated temperature. WOW. I could not have been happier with the results. My daughter and son in law came in and within an hour, that small brisket was gone. My wife said she could not stop eating the brisket because it was SOOO GOOD.
