Hi all, great site! I received a Char Griller side box only for my birthday. I don't need a full size smoker so I wanted something small. After researching, this model seemed to offer a good product that was cheap, well built and hopefully provide good results. I can't find any info on how to smoke properly using only the side box and was hoping for some help. I have never used a smoker and want to start by avoiding some of the newby pitfalls. I have no problem following the instructions for curing/seasoning to prepare it for the first use. I need to know some of the basics for the amount of charcoal and chips, tips for cooking and such to use since the meat will also be in the stand alone side box. It looks like a great little unit and I am excited about smoking my first ribs, chicken or anything else that I can get my hands on. In the mean time, I will pick up some lump charcoal, hickory chunks, vegetable spray and charcoal lighter and get the unit ready to use. Thanks for any information on my first time smokin'.
