I just read this AM where one fella removes his water pan which gives a nice bark. Another fella said after he removed the foil the product went back in the smoker without the water for another hr or so. I'm doing a brisket this weekend for the 1st time in my MES and will try these suggestions. Look on the beef sticky site & you'll find the recommendations. May the smoke be with you!
I use a disposable aluminum foil pan on the rack under the meat for drippings or for Chef Jimmy's Au Jus for brisket. I do not use the water pan at all in my MES. I no longer foil pork butts or brisket.
