I wrap them after 2-3 hours of smoking, I say 2-3 because I dont wrap them until I like the color. Are you familiar with the 3-2-1 and the 2-2-1 method of cooking ribs?
On the foil I drizzle honey, slice up butter and the crumble brown sugar. My wife preffers them this way because they are sweeter than not wrapping. This makes them fall off the bone tender if you arent careful, but if thats what you like then this is the perfect method for you....

Thanks tony, I do use the 3-2-1 or 2-2-1 method I have never added anything in when I foil them though. I will try this for the ribs I am doing for the SB. thanks for the info. I will let you know how they turn out. Good luck for the team you are pulling for!
