My question is thats a ton of coals to smoke with from the picture how hi did your temp get b4 you started bringing it down? If you waited too long you may of burnt them out to late to maintain your temp a little higher than 210,,,i start smoking with about 10 briquettes then start adding my wood chunks to maintain my temp for smoke then go back n with a few briquettes to maintain my temp after im done smoking the meat ...try the minion method also...
