This was my first time smoking and I couldn't get the temp above 195 I put the ribs on @ 2:30 pm and the brats on @ 6:00 pm @ midnight
the ribs still weren't done and the brats were over done. I think my problem was I went with what the WSM directions said as to how much charcoal should be used which wasn't near enough for it to get any hotter and I also used water in the water bowl. I don't know if that affected the out come or not. I did end up finishing the ribs in the oven and the flavor was their but the texture wasn't.
