My brisket was from one of our steer, harvested a year or so ago. Total weight 3.4 kg cut into 3 pieces. Now happily curing in the fridge. The smell of the spices was incredible! C'mon day 12!

Is that the same gasket that is used around the firebox door? How is it working for you? I bought a Smoke Canyon vertical smoker, and the firebox needs a gasket as there is a gap that is letting...
