Tri tip from homegrown Dexter steer.
Dry brined overnight, then dusted with cracked pepper and garlic powder.
Cooked over red oak at about 5-7 hand seconds, turning every few minutes.
Mighty fine indeed.

Next time, try lowering the grill 3 to 4''s off the flame. I love the char'd fat on TT. YUM!!!

I know what you mean.

The fat to meat ratio on that TT looks damn perfect. If I saw it in a store there is no way I would pass it up.
Your results show it well.
Dexter cattle can make some good beef.
