Picked up a 30 gallon galvanized can and lid for 20 bucks.

Drilled vent holes in the lid and intake holes in the bottom.

Drilled 2 sets of holes about 3 inches from the top.

Placed some 5/16" threaded rod through these holes for hanging rods.

Put my pellet tray in about an hour ago to see how it worked.

So far, so good.

I've got 10 pounds of bellies I'm rinsing and soaking tomorrow night, then overnight in the fridge.

Put it to the real test on Tuesday or Wednesday.
 
Warnings about using galvanized metal in smokers began circulating 15 or 20 years ago when people were smoking turkeys with inverted galvanized trash cans, and there is an argument when it comes to cold smoking as in theory the true cold smoking temps are not high enough to release toxins. So that you can form your own opinion.... here is an ARTICLE from this site from 2009 with some opinions on this.

I cold smoke when temps are between 32 and 40.

I use a pellet tray for smoke.

Think I'll be ok as long as I use it like this.
