smoked snacks

    First, I stripped the membrane on the pieces, then marinated the "brisket", and ends in a soy sauce/vinegar/worstershire/garlic powder/black pepper marinade.

    Smoked for 5 hrs

    Made a Pure maple syrup (the REAL kind) and butter reduction. Boiled it to a candy consistancy. Use 1pint syrup & 1 stick unsalted butter.

    Glazed the trimmings in layers until a "candy" coat was achieved.

    You can't stop eating it!

    I found this surfing.. thought the folks here might enjoy another type of hawg candy..have been at work since friday..get to head home wensday.

    Boy it makes weight come on just reading and looking at it. the maple butter reduction does sound like a winner..can'nt wait to try it..might even smoke a pancake and put it on them..

    just thought I bet that would be great on grilled corn also. even some smoked ripe plantain would be awesome with some smoked fried rice for a side.
