Smoke Rookie from Ontario Canada

  1. Hello all I am new to the world of smoking meats but I have made a few attempts with some pretty impressive results. My hope is that I can hone my skills and enjoy the fruits of my labour.

    It all started when I seen a picture of a smoker made from an old wine barrel. I found a barrel on Kijiji and went to work. I cut the top off, cut out a small stoking door in the rear and drilled three 1" vent hole in the bottom. Fuel source is lump coal in small BBQ pan with 3" chimney stack and two 18" grilling racks. First attempt was side ribs and chicken, then chicken and salmon then turkey. Everybody was impressed and now friends and neighbours all want a piece.

    I had to line the barrel with foil as the more I used the smoker the barrels staves started to separate and I was losing my heat and smoke. This is all trial and error for me and I will be tapping all the knowledge that has been assembled on this web site.

    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions Post it
    and you will probably get 10 replies with 11 different answers. That is because their
    are so many different ways to make great Q We all have our own taste.
