If I sear a beef roast to get a crust on it will that prevent smoke from getting into the roast?
 
No it will not many of our members like to sear before smoking. Some even sear before applying the rub
 
No George I do it all the time.

I sear almost all beef I smoke-and no it won't keep smoke from getting into your meat.
