Well, it seems the winter thaw is finally beginning. And my poor little daughter is sick so I had to take the day off and take her to the doctor. I decided to take advantage of the sunny weather and throw a rack of ribs in the MES30 and since I like a full smoker, I threw in some bone it chicken breasts I picked up the other day. Ribs for dinner tonight and chicken for the week.
Here's the rack of ribs with some mustard and jeffs rub.
Game plan for the ribs is about three hours of smoke or until one row (hickory and maple) of the AMNPS burns out. Then into a foil pan with some maple whiskey and apple juice and covered for the next couple of hours and then however much time out of the foil they need to firm up some.
Here's the chicken:
Just a rubbed with some oil and a rub I like with poultry that has salt, pepper, garlic, anise, and sage.
Gonna check the temp on those in about 45-hour. And pull them at 165 IT.
