As I looked through my fridge & pantry a couple weeks ago I was a little discouraged by what was not there.
As I normally do, I managed to throw something together and it actually turned out really good.
The meat in the meal is up to you. I have used smoked, pulled pork, left over brisket, smoked chicken, and then because my smoked meats were in low supply last night I just used chicken breast "tenderloins" (just divided chicken breasts)
Heat up about 3 TBS of extra virgin olive oil
Throw in about 1 pound of chicken, pork, beef, whatever - this time I used chicken.
I really need to correct the date on the camera....
Mince two cloves of garlic and add that to the pan with the chicken.
Next add one 12 ounce can of Rotell tomatoes with green chiles (original or mild depending on how spicy you like your food.)
Stir in the tomatoes then add about 6 ounces of tomato paste and stir.
Add about 1-1/2 TBS chili powder
Turn heat to low and allow to simmer for about 5 minutes to marry the flavors
Sprinkle on your favorite cheeses (with pork & beef I like to use smoked gouda but I used colby & monterey jack for the chicken)
Cover and simmer allowing cheese to melt.
Serve it up with some vegetables. This whole meal takes a total of about 15 minutes to prepare.
My family loves this dish and if there are any leftovers, it's better the next day!
