So yesterday i smoked a pork shoulder to the it of 190. The reason i stopped it at 190 was because the roast is for today. So my question is can i just throw it back on the smoker and get it to 205 with it not drying out or is there another way to keep it moist and reaching my IT. Thanks for any response. 
 
Pan it with a half bottle or so of dark beer poured in the bottom of the pan. You can put it back in the smoker uncovered to reach your temp or in the oven covered but vented to reach your temp. either way you should be good!
 
Hey thanks. i did put it in the oven still wrapped in tin foil from yesterday. I will just wait for it to get up to temp and drink more beer til that happens.
