Lots of folks forget about how elevation and barometric pressure affects boiling point.
Coming from 1200 feet above seal level to now at over 3,000 feet, I sure did learn quick.

Thanks, yea it can be a learning experience when all these factors are not accounted for. I know from experience. LOL

There are other calculators out there, but I prefer this one.

I have never used a temp gauge on ribs, Looks, bend test and a gentle tug
