Pork Belly Burnt Ends

grabbed a belly from Costco and decided to make some Pork Belly Burnt Ends. Been wanting to try so here we go.

Got the pork belly sliced and cubed. Then I used a combo of Stubbs pork rub and Malcolm reed the bbq rub.

I cooked them for 2 hours at 250 with cherry wood.

First time I’ve used cherry wood. I liked the way it cooked. Nice coal bed and good temps the entire cook.

After two hours I added butter, brown sugar and honey. Then I covered and cooked another 1:45- 2:00.

After that I probed the cubes and they were in the 200-205 range and quite tender. So I drained the pans, added some Stubbs sticky sweet bbq sauce and back on the smoker, uncovered for about 20 minutes. They were great!

I could make myself sick on these things!! And they are easy as can be to make. Can’t believe I waited this long to try them.

Great write up and they look amazing. I have been wanting to try them myself. If I did the math correctly, they were in the cooker a total of about 4.5 hours??? I may have to copy your method. Nice job!

Thanks, it was close, but not quite 4:30. About 4:15/20. I’m sure another 15-20 minutes woulda been fine though. I think the key was to drain before saucing, and finishing uncovered. Really set up well that way.
