Oldie but newbie....sort of.

    Hello all. I've been lurking for a while (to my great benefit) and thought I would join to have the opportunity to thank the forum and the fine folks that share their, experiences, tips, and recipes. Though I have not used the SMF as my only source of smoky information I can truthfully say it has had the most impact on reducing the steepness of my smoking learning curve, especially on my new MES 30 smoker. I live in southeastern Indiana, mid-sixties, and have always enjoyed grilling. A couple of years ago, I thought I would try my hand at smoking. So, I made and modified a tray for wood chips for my Holland grill. Had some good smokes (and some not so) but to hard to control temps below 250 so limited to what I could do to say the least time consuming,(constant attention with any wind) but I was hooked so here I am.     About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...
