Hi, I've been brewing beer for about 17 years, started fermenting veggies a few years ago, and now I'm learning about fermented meats. I've been smoking meat and fish for many years, but I didn't know fermenting meat was a thing. Until now. I intend to follow this rabbit hole wherever it leads.
