I smoked a Boston butt yesterday and tried a variation on one of my favorites. A few years ago I took the fam to Disney World and we did the Luau. I enjoyed the chicken so much that I bought a Mickey cookbook to get the recipe. I eventually decided that I liked the marinade better on pork. This time I mixed all the dry ingredients and used it as a rub. I mixed some of the rub with apple cider and vinegar and used it for a mop about every hour. I smoked it over hickory that I bought green last spring. It felt a little heavy so I was concerned, but it burned so clean that I could hardly see the smoke. After 7 hours, we sat down to pork perfection. I made a sauce by mixing about a quarter cup of rub with half a cup of chicken stock. It really wasn't needed but, if used, it should be used sparingly.
