Sorry for the delayed post didn't take shots of the meat color or plated. I did these using the Kettle with the improved offset method.

Season a 1 bone in PR it is enough for 2 meals here Salt,Pepper,Worcheshire Sauce 


Kettle set with KBB an Cherry Chunks I use very little Kbb doing this

Only lit 9 in the Chimney 


Took 2 1/2 hrs to reach 138*f  (outside color)


Inside get napkin ready


Plated with some canned corn
