We are looking at a Meadow Creek pig roaster and I'm almost set but wondering about the available options. If anyone has used these for direct cooking I could use some input.

We will smoke some pork butts here and there but a lot of times it will be used to cook burgers, dogs, sausage, chicken etc. What I'm wondering is can I just use the pull out charcoal tray to cook direct or is it necessary to get the charcoal tray that brings the charcoal up close to the food?

Otherwise I like the idea of the pull out tray to make it easier to add charcoal if necessary and will probably get the second tier grate. Any other input welcome.
