Good Morning from Wake Forest NC!
Todd here, originally from the mtns of NC, Boone to be specific, and now down by Raleigh. My bbq roots are certainly western nc based, not as much vinegar and little more tomato. Spent some years out in KC,MO where I was exposed to brisket and St. Louis style, and South American BBQ.
Have been smoking for 15 years with "ole unreliable", Brinkman bullet, but know how to use it(babysit) and pulled amazing q off it. 35th B-Day this week and getting myself the 22.5" WSM. While researching I found this site and happy to join the community.
Topics of Interest:
Mods-I'm not the best with tools, so don't think I will risk drilling holes in the WSM, but researching regardless.
BBQGuru? Never seen anything like this before. Confused about operation, but intrigued.
Pretty certain just by upgrading to the stock WSM, I will feel like a new man and mods aren't needed for now.
Thanks for providing the forum. I will lurk and post!
