I discovered what "REAL BBQ" was about 6 years ago at a customer location when I was in Rochester New York. I was never a "fan" of BBQ (my own fetal attempts were bad) and had dinner one night at Famous Dave's of all places. While I take the kids there once in a while, I tend to try to find other out of the way places.
Three years ago I made the decision that I can do this at home. I researched and found lots of information (This forum being one of them) and was overwhelmed. Well needless to say I"m still at it.
My first smoker was an Electric Smoke Hollow. I still have it and use it today for side dishes. The primary reason I don't any more is that well after the first month of using it every other day, I was shocked to see my $330 electric bill. Two years ago I moved to a Char Griller 5050 Dual Gas/Charcoal system with an offset firebox. I've been using this ever since but now I'm ready for a true Pit Rig and searching for one. Looks like a trip to Texas is in order if I want one to start with that shall we say won't cause my wife to kill me over the price.
Anyhow, I'm here. This is my second post, my first being a modification I did to change my Offset Char Griller into a reverse flow smoker.
