Anyone ever tried smoking them to something like jerky? If I did it I wonder how long they would keep at room temp?

Giving it a try! Right now I'm thinking 3 hours @ 180 subject to  change.

These are going to be good with a Ritz and some bourbon gouda cheese later!

Hey CM, They are good. I overdosed with rub, having to rub some off with a paper towel before eating. Keeping in the fridge because I have no idea about safety on something like this? Seemed like they were right between 4 and 5 hours. 
 
These would not be shelf stable. Manufacturers use very specific methods to make jerky shelf stable. The equipment and process that they use is not fiscally feasible for the home cook.
