I'm a complete noob but I'm an old fahrt (look it up; it's German). I've grilled for 50 years or more but never really learned smoking techniques. I've deep fryed turkeys for years. I want to learn how to smoke brisket, pork shoulder, poultry and go from there. I have 2 cookers at present. One is a very small portable Weber charcoal grill. It's big enough to do what little grilling we still do. The other is a 3 burner gas grill for which I have a griddle and a wok. It doesn't get much use these days.
I'm trying to decide what sort of smoker to buy for low temperature smoking. I've read several articles advising against the sort that I've got a jones for - the horizontal offset smoker. Being retired - and poor - I don't have much of a budget. I can probably find a used hor. offset smoker at a reasonable price, but I don' t know what to look for and what to avoid; so I've about decided to buy a new one called a Hondo Smoker.
I've read a lot of advice about getting and using a Weber kettle or egg style grill. Again, I don' t know enough to know whether this is a good idea, especially because I'm a beginner.
As for bio data, I'm in my 70th year married to my high school sweetheart for 50+ years. Our only daughter is grown and about to get married to a fine young man. I spent my working life in IT. I started as a mainframe computer operator and soon learned programming. Wrote my first program in 1965 and hung up my spikes as a CIO. Most of my career was in the finance industry or in the software development industry.
