We will see how this goes.
We get our seasonings for it from the local butcher shop. (you can use whatever kind of seasoning you want to use)
2lbs of water
1 1/8 cup of molasses
I mixed it all in my Kirby 5 gallon bucket mixer until it was rather fine and partly emulsified. I then put it back in the meat tote and let it sit over night in the fridge. From there I stuffed it into my kirby water stuffer using the jerky attachment. I use parchment paper cut into 3 inch strips and thread it through the tube holder. from there you just step on the foot pedal and pull the paper out while the jerky strip gets laid right on it.
When you have you strips, I put them on baking sheets and put in the over at 225 degrees for 1 hour and 30 minutes.
I like my jerky tender and not stiff dried out and crumbly. Pictures to follow very shortly.
