Hey, is this thing on?

  1. Hi, I'm Mark, I've been lurking here for a while... drooling.

    I bought an electric smoker a few weeks ago. Yeah, to smoke meat with, but also to tinker with.

    I'm lazy- I liked the idea of the CookShack Amerique that drops to a hold temperature when the meat reaches a set temperature, but it was way too expensive. So I thought I'd make my own.

    Okay, not from scratch. I've got a refurb bottom of the line CookShack. I've added an external temperature controller to it and some other stuff, but that's a thread for a different forum.

    Anyway, I've just started smoking- a pork shoulder (took almost 3 hours per pound in the CookShack), a fatty, a couple of racks of pork ribs and a turkey- it was Thanksgiving after all.

    So, the smoker seems to be working fine. Now I'm ready for the next stage- changing to a hold temperature when the meat reaches the right internal temperature.

    I'll keep you posted.

    welcome to smf mark... sounds like you have some cool projects going on... for sure start a thread in the elec smoker section and tell us all about it when you get it all figured out. cant wait to see some qview from that smoker!!! good to have you onboard!!!!

    It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

    I bet that hold feature would be easy to adapt to My Masterbuilt Electric Smoker ( MES) as well. I'll be watching for your post on your progress, if its explained at the idiot level and not too complicated in the first place. I might be able to add that feature to my MES. If its harder than walking and chewing gum at the same time probably beyond my capabilities though. I bet you could also attach a really loud alarm to it ( I am quite deaf ) to alert one that the meat was ready. Hmmm sounds like it might be just what I'm looking for.

    Mark, you've found the right source for smoking pleasures, SMF that is. If you haven't already added/changed therms, consider it as a tool for giuding your smokes temps, cabinet and meat too. It's all good my friend.

  16. I guess CookShack does trade-ins or something- I just called them directly and asked if they had any SM-008 or SM-009s.

    I figured I'd go with a CookSahck since it seemed like one wouldn't need to keep adding wood for smoke as often as the MES. And anyway, it would really be a shame if all the electronics cost more than the smoker itself.
     
  17. Oh, I don't think thermometers is going to be a problem.

    On Thanksgiving I was so paranoid I had the RTD for the PID controller measuring the smoker temp, verified by a K-type thermocouple, checked every so often by my IR thermometer/pyrometer. Inside the turkey I had a Polder meat probe (NTC thermistor) backed up by an instant-read dial thermometer (bimetal?). So the only common temperature sensing technology I was missing was an actual mercury thermometer.
