i know you can roast, peel and freeze them but has anyone tried dehydrating them? I’m assuming once they’re roasted and peeled they can be dehydrated like any other pepper but I’m wondering if anyone here has done it before.

It's awesome. So I would think DIY is easily attainable.

I've been putting this on everything.
 
Yeah, I’ve used that technique for Pablanos and bell peppers with great success. But I’m hearing that the skins on Hatch chili’s are extremely tough and need to be removed.
It’s no biggie, I’ve got 10 lbs. coming. I’ll roast them, remove the skins the freeze some and dehydrate some.
Looking to make some hatch chili powder for use during the cold winter months!
