Glad to be here, guys..

Ive been smoking for about 30 years and have used everything from trailer pits to COS. Now im starting to get into cold smoking and hoping to find some help here with that.

Welcome to the board! Yes, lots of cold smokers here, we should be able to help you out. I haven't tried it myself yet.

What's your current smoker(s)?

Ive down sized considerably from my dad's trailer smoker. Right now I'm using a Chargriller with firebox that I'm looking to mod.

I worked offshore for many years and lived in an apartment so i wasnt really able to do much smoking (more grilling than anything) but my wife bought us Chargriller a few years ago for the new home and have been rolling smoke a few times a month since then.

Looking to learn from you guys and possibly add on to a thread here and there.

Ive been on a cheese kick as of late (manchego, bacon cheddar, 3 chile gouda, sharp cheddar and drunken goat with apple wood yo name a few) and going to my local cheese place to pick up a few more varieties to try some peachwood on.

Good morning and welcome to the forum from a cloudy, windy and warm day here in East Texas, and the best site on the web. Lots of great people with tons of information on just about everything.
