My name is Nick and I am new to smoking. I live in Tallahassee via South Florida (Dania Beach) and went to FSU. Now I work at FSU but will (hopefully) become gainfully employed as a law enforcement officer. I just graduated the local law enforcement academy a week ago today.
I have joined this forum because it seems to be the place for smokers, grillers, fryers and the like to convene and talk about what they love on the internet. Although I am completely new to smoking, I am very eager to learn everything I can. I have already learned a lot, but I still feel like I know nothing at all.
My girlfriend got me a Brinkman Mini Offset Smoker (http://www.homedepot.com/p/Brinkmann-Charcoal-Grill-and-Off-Set-Smoker-810-3015-S/204442310) for my birthday about a month ago, but as I was in the night class at the academy and still had a day job, I am only now starting to use it in earnest. So far, I have smoked several chickens and a six pound pork butt and I have grilled a few portabello mushroom burgers on it.
I love the smoker, but I may have to make a few mods to it as it has little cracks and crevices everywhere that release heat and smoke. Otherwise, it seems to be a great introductory piece of equipment. Unfortunately, I got a little carried away cleaining the inside and scraped off some of the inside finish. Does anyone know what I can do to refinish the smoker there on the inside or somehow strengthen the finish or apply my own coating so that it is a bit hardier?
I probably shouldn't be discussing all this in the 'Roll Call' forum but I have a tendency to write long-windedly.
