Hello friends,
My name is Scooter. Pleased to meet you. Living in Henderson, NV, just outside of Las Vegas. I have a Smoke Hollow electric smoker. I've had it several years. Pretty pleased with it. Right now I don't use it, since with the power off its a smokey 200 degrees inside it. Thats my only complaint with it, I find it rather hard to keep an exact temp. None the less, I've smoked Turkeys, Chickens, some beef, lots of Jalapeno Poppers, etc. Fun stuff. I checked out a book from the library 'Charcuterie - The Craft of Salting, Smoking & Curing'. I'm addicted. haha. I've already made my own italian sausage, hot dogs, elk brats, etc. Now I'm ready to kick it up several notches, and thought I'd check things out around here and see what you fine folks are all up too as well. I've only used hog casings so far, and I have some pink salt.....started with a tiny little metal grinder $10.00, wife just bought the next step up, little table top that suctions down to the counter. I have a kitchen aid mixer, so my eye is on that grinder/stuffer next. Oh to be a rich and wealthy man...haha. Anyways, nice to meet you all.
