Hope you all are well. I am looking forward to smoking two butts on my kettle this Sunday. This will be my first long charcoal smoke so we will see how it goes. But in the meantime I’ll share some steaks I’m working on at the moment!

Cook looks good . Don't be afraid to let that kettle do it's thing . If it wants to run 275 / 300 , ( may need that with 2 ) let it go . I've done them a bit higher than that . Comes out great .

Change of plans. Had a little too much st pats fun Saturday night so I will be bringing you all an early Tuesday morning smoke of 1 butt. Stuck the other in the freezer and will do it when I have another weekend off. I’m going with the snake method this time. Will keep y’all updated throughout the process. Stay tuned!!
6 hours in 160 IT. Time to wrap and extend the snake. Should not have to touch again until done. The snake method has been pretty much set and forget, been dialed in around 275 all morning with 40 degree outside temps.
