ECB too hot

Hi all,

I have 1 chimney of Royal Oak lump in my ECB. It has been going for 30 minutes, and still 305 degrees. The charcoal is in a pile. Should I spread it out in the charcoal pan? Will it cool down that way? Or will the coals go out if I do that?

Anybody else? Is it best to keep the charcoal in a pile, or spread it out in the bottom of the charcoal pan?

SPREAD IT OUT.............you should be doing the minion method any way........

is this a plain old ecb, or the gourmet model?

It's a gourmet model. Down to 254 now! I'm going to smoke 2 chicken breasts. How long do you think it will take?
