This was my throwdown entry,I threw it together didnt realise I was going up against "art" like that paella.It was just so pretty.Mine looked like it crash landed on the plate.
Anyway my butcher makes a great duck sausage,duck meat,orange ,pistachio,spices,so I figured Id stuff that inside a duck make use of the start of mango season.
So I boned out a duck just left drumsticks & wings in brined it in mix of water,orange juice,blood orange juice ,white wine,garlic,szhuan pepper a cinamon stick,mango juice drink,salt.Left it overnight,then got ready to put the duck sausage in it after letting in rest in fridge ,patted dry. OK now, I got to sew this guy shut,but 4 sausages wasnt enough so I added bacon cant go wrong there,mango,pistachio nuts,spritz all that with mix of orange juice ,blood orange juice,mango /orange drink,brown sugar & Bundaberg rum.
