Got some charcoal pellets from Todd,any ideas how to use them?

I have used them on chicken leg quarters. I have also used them when reverse searing steak. Good results both ways.

Never bumped into any but suspect they prob burn pretty hot and fast. Works that way on small gauge lump anyway. Might be great for a quick cooked chicken.
