This one is a favorite at the house. Thought you all might enjoy too!. The dry mustard already supplies some heat so be careful when adding pepper or other heat sources.
BBQ Sauce #2 - Rum
Recipe By: Matt S (me)
Ingredients:
1 cup brown sugar
1/4 cup chile sauce, Heinz - easy on amount
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/2 cup ketchup
1/2 cup rum, Myers Dark - don't use spiced rum
2 tsp A1 Steak Sauce
1 tsp ground dry mustard
2 cloves garlic, minced or 1/4 tsp powder
ground black pepper to taste
Directions:
In a saucepan over low heat, mix the brown sugar, chile sauce, rum, soy sauce, ketchup, Worcestershire sauce, garlic, dry mustard, and pepper. Simmer 30 minutes, stirring occasionally. Let cool. If you are going to store in refrigerator for a long time I would substitute garlic powder vs the minced cloves.
Notes:
Possible adaptations: usually do the 1st three
- substitute garlic powder vs cloves
- substitute white pepper for black to lower the heat content (mommy request)
- onion powder 1 1/2 tsp
- ground celery seed 1 tsp,
- ancho or chipotle powder,
- cumin,
- cayenne
