Next time I'll do the raisins, braise then smoke with some apple/cherry wood.
I read the original post and that explains why no smoke ring. Sorry I just had to bring that up. Looks great either way.
Since it was My Mom and sister's birthday and I promised the wife I would cook, I didn't want to take any chances.
My concern smoking these is getting an accurate temp because they're stuffed, sometimes these loins go from perfect to dry in what seems to be minutes.
But it would look SWEEET with a smoke ring!
I did get to play with the smoker the day of the stuffed loin, which made me a happy camper
