I've done many briskets and buffalo turds, but this will be my first attempt at chicken or game hens, haven't decided yet. I've already found the rubs, brine, ect.....mainly I just want to know what time per pound to cook at so it is ready with everything else. I have a propane smoker and plan to set at 350 degrees for crispy skin. Thanks.
