Picked up a new toy off craigs.

I was lucky enough to pick up a new toy off craigs list yesterday for only 10.00. It didn't work, but I popped it open found a bad cap comming off the bridge rectifyer.
Now I just need to figure what to do with it..

Cabela's has a pretty good warranty policy. I would give them a call and see what they can do for you.

Oh it works, I replaced the cap. Tested her out, and fired her up. Works just fine.

Yeah, I'm thinking of trying my hand at some sasuage, but am a bit confused on the whole cure thing.

Great find! I picked a different brand up on CL last year. We spun the keys off the drive shaft grinding up about 160 lbs of meat from 2 buffalo last New Year's. Put us in a heck of a fix for an hour or so! The model was rated for heavy duty home use -- not as I would define it, though! I guess it's commercial next time! LOL!

Why not start out with some fresh sausage and work your way up to the cured varieties...

Great score. You can make fresh sausage without the use of cure but curing is not hard. Personally I use Instacure # 1 for sausage. You can also now grind your own meat for burgers. Did you get the stuffing plate with the grinder?

Yes it can with three different size cutting plates, two sasuage horns, and the sasuage plate. All and all pretty good for my use. I am not a hunter, so I wont be grinding 100+ pouinds of deer or elk.
I did do two pounds og longunisa last night. It is a phillippine sweet sasuage,(fresh). Thoiugh it did call for morton TC, that I was able to fine at the grocery store in town. Also ground up some burger for tonight from a chuck roast. Pretty fun machine so far. I guess for the price I cannot complain regardless of how often it gets used...

There are many kits available that come with the cure. All you have to do is follow the directions.

I have seen the kits, but can't really justify the cost. I mean I can follow a recipe , and mix my own spices just fine.

Nice score for sure. Now you will like the fact that you can make your own sausage and grind your own hamburger and anything you could really dream of. Happy Dreaming.

Yeap, I am considering a smoked meatloaf for tomarow. And I'd like to try a polish sometime soon. I have a few recipes, and all of the needed ingredents. I just need to think over if I should just go with morten TC which I have or order a different cure. From what I have read here and there it seems that TC is fine at a rate of 1 1/2 tsp per pound, with no addittional salt added to the recipe. So I might go with that sence I have some TC already. I'm looking to do only 2-3 lbs for a first polish, smoked over pecan maybe, but am not real sure which wood would be best.. I have hickory, oak , pecan, and some messy on hand.
