Hello, I am from Northern Va, and new to smoking. I can grill the hell outta some steaks, but want to start getting into smoking. I got an old horizontal offset smoker from a friend for free. I've made some racks for the bottom, and some 1/4" stainless bar stock racks for the meat to set on. With plenty of pork and beef available in my back yard along with a plethora of cherry, apple, hickory, and tons of other woods near, I'm psyched about trying my hand at this smoking deal.
