Hi ya'll,
The name is Wayne i come from Walsall England however I now live is South Louisiana, been here since 2004, I'm not a great lover of the food down here (I'm gonna get slated for that comment) so we kind of mix and match the food in my household, the children love my home made chips (french fries) and adore my curried food,

Been learning BBQ since being in the US, have used the oven and BBQ pit to cook brisket and Boston butt with great results but realized its time to cook this food the correct way/ preferred way and get a smoker, this we have done.......

While you can get recipes from the internet and cook books i believe the only way to learn is to mix with the people that REALLY KNOW how to smoke.. That's why I'm here,

Wayne welcome to SMF glad you decided to join us. You'll find lots of good info and some great recipes here. I'd also suggest signing up for Jeff's 5 Day Ecourse its got lots of great info and its free. Have fun and happy smoking

My Mum allways told me if i didn't have anything good to say then keep my mouth shut . So, I guess i can say welcome to the smokehouse.
And then i can say, I like some good fish & chips and then i guess i can say at least you aren't from france.
But i'm trying real hard to not say anything about you not liking our cajun food.

Yes i love my Fish & Chips too,

English food can be bland i agree, some foods i loved while in England are not so good compared to what i eat here in Crowley,

I don't eat seafood either and its hard to avoid here to some point,

Bob I'm wondering if its worth smoking stuffed pork chops, the grandma cooks them in a saucepan with gravy but i just cant get them tender enough on the BBQ pit, let me know if you have smoked any.....

Looking forward to smoking tomorrow for Mothers day, ribs and pork steak followed by a Peach Cobbler, COMFORT FOOD

Stuffed chops

I have never smoked stuffed chops .I do filet a pork loin and stuff it w/ boudin or sausage or some fruit. Roll it up and tie w/ butchers twine.
Smoke at 225 -235 till 15 internal . Wrap in foil w/ some apple cider and
Back on the pit to 165 and slice.
i don't see why you could not do the same w/ some nice thick chops ,
Just have to make sure that the temps are good around the stuffing.

When I smoke stuffed chops, I like to cure them for a few hours first. It makes them pretty moist.

Welcome to SMF Wayne. I will go easy on you for not liking our fine Cajun Cuisine. We have a good time here and share lots of Qview, techniques and recipes. I have to ask. Is the reason you don't prefer Cajun food is because it was too spicy? There is a misnomer that cajun food has to be spicy to be good. Actually true cajun food is about lots of flavor not spicy heat. Any how, glad to have you on the site and I look forward to seeing some smoke coming from the Crowley area.

First off welcome Wayne to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.
Here's a link to photobucket it's free and easy to download pictures. Then if your really new to smoking Look up the E-course.
It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
