Eric,

I like your idea about using an auxillary rack for all the reasons you cited. What size is that rack and where can I get one? points.gif

Thanks brother, the rack did help to maintain the firmness of the bark on bottom throughout the steaming, and that in itself was worth having it for...plus the handling of the shoulder was so much easier...no fuss, no muss.

These are non-stick bakers racks which I modified here...pretty easy to do:

You may have missed that thread...it's racks I made for my Vault for double-capacity of my Jerky smokes.

Enjoy!

It all looks real good and expertly prepared as usual. Your explainations are as good as your smoking..points.gifPDT_Armataz_01_37.gif

Thanks for directing me to the site Eric. I'm at work and the our computers are set up that we have limited viewing access to sites like SMF. Will get home this evening and check out the q-views for your racks. Thanks friend..points.gif
