Beer Bathed Brisket Qview

Found a 6 lbs brisket at the store in the manager special section for $8.47!

Had to cook it yesterday. It was pouring outside, so I found an old Beer Bathed Brisket recipe which my wife loves.

Rubbed the brisket down, seared it on both sides for awhile, then put in roasting pan, and poured over my reduced mixture of guinness extra stout, ketchup, beef broth, onions, garlic, and carroway seeds.

It took about 3.5 hours in the beer/broth bath
 
Looks great, and definitely gotta give you points for using Guinness, the greatest beer ever invented. (I love being Irish)

Would love to give this a try, got 2 packers in the fridge right now though one is for corned beef on St. Patrick's Day.
Maybe a few hours of smoke first then finish up in the beer.

I'm assuming you shredded the flat and the point, did the point leave a lot of fat floating on the top after it rendered out?
 
I did shred the flat and point, but I trimmed it up really good prior to cooking.

I imagine I will have a pretty thick fat layer on the stuff in the fridge right now, but it wasn't bad
 
My wife thinks it's hilarious that I can't go to the store without checking the "managers special" section of the meat dept.

However, it's a smokers dream. A ton of chucks/7 Bone Roasts/Brisket etc ends up there for some reason
