Which do you think performs better, a UDS or a Weber? I am not factoring price just performance.
 
I prefer the Weber over the drum. I find it easier to control temps on the Weber, especially when taking off the lid and the drum has a huge spike. I don't seem to get this with the WSM.

Another reason I like the Weber more is that I prefer the taste of the product from the WSM over the drum due to the fact of the fat drippings that burn off. That embarks a flavor I'm not particularly all that fond of.

A lot of folks don't mind and in fact really like the flavor.
 
I know one of the advantages of the Drum is that it can go sometimes 16 hrs on fuel. Do you know if the Weber can get the same amount of hours?
 
I haven't got 16 hrs from the Weber but using bricks it will run long enough to do good size butts and briskets. I've had mine go 10 hours or so on one load.
 
I would go with the WSM(big surprise eh).

I know alot of people who own both, but only use the WSM once they got one.

I actually could have had a UDS for free but dont really dont have any interest in another smoker nowdays.

Like Rick I can get 9-10 hours on a single ring of fuel(I use lump though). Those smokes have all been below in freezing temps, so I am guessing I will be able to go longer once the weather warms up.

WIth the above said I dont think you could go wrong with either, good choice going with a charcoal smoker.

That's a difficult one for me to answer. I have an 18" WSM and was looking to get a 22" when the UDS craze started. I now have two drums too. The WSM works flawlessly, reasonably long cook times and little need to play with fire. The drums work flawlessly, get really long cook times and with little need to play with fire. Does one work better than the other? No. Do I like one over the other? No. Except you get the rush of having built a drum yourself and it seems to impress those who are drumless. They both cook great Q and give you plenty of beer drinking time and progress on the HoneyDo List. Like em both and can't pick one over the other for performance. All things considered though, I like my cheapo offset the best. Great Q, get to play with live fire
and it looks the coolest doing what it does best, wafting the Thin Blue Smoke.
 
Well you'd need to figure out the fuel amount I guess.

I've gone 12 hours on a single load on my 18.5" with maybe a few whole coals left the next morning after it all shut down. That is with the odd lid lift + spray on the pork butt.
 
If money's not an issue, try a ceramic cooker like the BGE. One load of lump can last over 18 hours.
 
No offense to anyone but I love my UDS ! I can control temps very tight and produce meat the same, time after time. Just learn whatever smoker you have and it will produce.

I cooked on my fathers wsm for years and loved it but my new UDS is so much more fuel efficient!
If you don't like the flavor of the drippings on the coals you could make the huge investment of $7 and add a drip pan (picture below) or do like DDave and cover your basket with steel plate. Managing the temps for me is so much easier.
 
Hmm.....I must be one of the only ones that doesn't seem to notice a huge temperature spike with my uds. I changed my design a little to hopefully compensate for it. I made my uds a one intake design with a 2 in piece of pipe that extends to 6 inches below the lid, I took a plate and made it slide over the opening to where it will control at 240 F. I honestly have never noticed a huge spike...maybe I am lucky I notice 10 to 20 degrees if I have it open for more than 10 minutes but other than that it seems to hold the operating temperature when I open the lid for spritz or a basteing.
